The reason those cheeses have a high protein per gram is they are very dry cheeses. I think if you compare protein to calorie ratio it will be pretty even in most cheeses. The exception will be cheese that is made with defatted milk (like 2% or skim) or maybe milk from goats and sheep. I’m not sure what the difference is between them and cow milk is.
