Some vitamins may leach into the water, but for the most part, it should be minimal. If you are just trying to soften them up, you can roast them in the oven or wrap whole sweet potatoes in a damp paper towel and microwave for 5-7 minutes

Effectively, everything is relative.Pan fried sweet potato is healthier than pan fried regular potato’s.

Cooking with coconut oil may be healthier than cooking with animal fat or regular vegetable oils.

However, baked sweet potato is certainly less calorie dense than fried sweet potato.

Health is about making conscious choices. And knowing what your health goals are.

If your goals are about calories then frying anything is going to add calories without making you feel full.

If your goals are about nutrients then the boiling process may make you lose some nutrients in the water but generally speaking further cooking (so long as you aren’t burning) doesn’t massively degrade nutritional value any more than any other cooking method.

Generally speaking, if you want something to retain as much nutritional value as possible without adding calories than baking/grilling or steaming is your best bet. At the end of the day, it’s sweet potato, still a very excellent carb choice.
