I believe the liquid that preserves them absorbs some of the nutrients. I still opt to strain and rinse the beans, because that liquid is loaded with sodium and I don’t want salt intake that high. So they may not be as healthy, but they’re still probably the healthiest canned food you could possibly eat. The bagged dry beans aren’t any more expensive I don’t think, and if you get in the habit of soaking a bunch at a time it’s a very quick and simple process.

Answer

There is scientific dispute on this. Some studies found beans cooked in the can lost a little nutrient value to the liquid, but the nutrients in the beans were more bioavailable, others found it made very little difference either way. I’d say just go for it, and enjoy.
