For me (diabetic) it is fast and faster. I can’t consume any carb as it is. I eat fat first to slow down the digestion. Then proteins and followed by carbs to reduce its digestion speed.

Edit: to answer your question, check the list of GI values of food. Higher the GI the faster it is. You may want to look in between the range of highest and lowest Gi. Imo it does not matter or significantly make any difference as long you are healthy and eat healthy whole foods.

there’s something called the glycemic index. that’ll tell you how fast people’s blood sugar goes up or down after eating certain foods.

using that you’ll see there are indeed “fast” “slow” and everything in between.

high GI foods are what diabetics should avoid, no surprise coke and snickers bars are examples of these which imo everyone should avoid.
