I find salad prep annoying too. Costco has huge bags of salad mixes, with mix ins and even dressings. You can leave out some of the stuff that’s less healthy if you want. I get a big bag, portion it into 4-5 Pyrex containers, and it’s ready to add dressing and eat. Takes 2 mins.

Sautéing spinach and chard with a little garlic and mushrooms is very tasty. For tougher greens, you can slow cook them.

I find lettuce to be very boring myself and am currently trying to motivate myself to make more salads at home. Making my own dressing helps, as well putting a variety of interesting things into it. Even a blend of greens is better than limp old lettuce by itself.

Any time I’m making a chili, soup, tomato sauce, etc… I through some greens in. When I make savory oats, greens go in. Wraps and sandwiches.
