I am looking for some books on Nutrition. I really want to learn as much as I can but I feel like there is so much misinformation out there on the internet it can be hard to sift through. So I am looking for book recommendations. Does anyone know of any good beginner nutrition books that you found to be extremely scientificly accurate? (Not looking for any of the “eat this not that” type information. I want to learn the why and the science behind food.)

Check this list and pick the book(s) with the highest scores. Red Pen Reviews does reviews of popular books for their scientific accuracy & reference accuracy. Of course the highest ranking book is the one by Walter Willett.
You can also read the scientific report from the US dietary guidelines advisory committee, or just read the parts of it you find interesting. The guidelines are well-researched and the report is easy to read.
As for sorting through misinformation, if somebody’s making outrageous claims like “everything the experts thought they knew about XYZ is wrong,” they’re probably full of shit.
