I’ve been eating kiwi with the skin for years now. I just use my fruit/vegetable scrub brush to clean it first. I also eat my strawberries with the leaves on top. Sweet potatoes skins are also edible too! The only fruit I don’t think I’ll try with the skin is banana. I’ve seen that it’s edible, but I have trouble getting past that one.
We peel potatoes and are fussy about sprouts, greening and eyes because this is where a lot of the toxins are. Chaconine and solanine. They can be caused by damage and sunlight exposure. These poisons are not removed by boiling etc and need very high heat so maybe that’s why we commonly deep/fry potatoes. The skins of plants are commonly more defended and that’s also probably why we often remove them. Let alone the use of pesticides liberally applied to the outsides of farmed produce. So getting ones fibre from skins of vegetables has a cost benefit issue that should be considered.
