You can look at low sugar, whole grain organic breads. If you want, there are some that use ancient grains as opposed to wheat.
You can do wraps– they do them in whole grain as well, and you can find low-carb ones, though I’m not sure if they would fit your ingredient requirements.
Open faced sandwiches drop the intake from 2 slices to one.
Big leaf lettuces get subbed for bread/wraps. I don’t know the variety most often used.
That’s off the top of my head.
Egg wrap, lettuce as the placeholder of the bread. If your going to use bread use keto bread or wraps but most of them have bad ingredients in them. Dave’s Killer Bread is the best bread nutrition wise if you were to go back to bread. Hope that helps.

Thinly sliced bread (there are specific brands that just give you really thin sandwich bread), wraps etc. I’m partial to the sundried tomato wraps, they are yummy.

Just FYI the rotisserie chicken all supermarkets have isn’t a terrible choice if you don’t eat the skin. Personally I like the taste better and avoiding the preservatives deli meat uses.
These are absolutely the best GF lowish card substitute I’ve found. I think you can probably only order within the continental US but they are always perfectly soft and edible.

The type of bread isn’t what is going to make a difference as long as you dont choose a brioche or something with a lot of fat. Apart from that you are only negotiating with a few calories. Regardless of your goal (apart from allergies and intolerance), you don’t need to reduce carbs necessarily, they are your energy source to be able to do exercises and daily activities.
