Have you ever drank coffee or alcohol multiple days in a row? If you have, you probably have experienced an increased tolerance in the 2nd, 3rd, and every consecutive day. You feel less of the effects because you get used to the feeling, so you need more to get the same buzz as day one and need some to feel normal.

Your cells work the same way. They’re so used to feeling the effects of insulin, they become tolerant of it, and it doesn’t have the same effect.

Like any drug, abstaining permanently or temporarily from said drug will fix all your problems. Insulin is necessary for life, but keeping it at a minimum is optimal.

Low carb, fasting and plenty of sodium (5-7g if you’re low carb) can correct any insulin resistance you have, but give it time to work it’s magic. People don’t become insulin resistant overnight, and they won’t become sensitive overnight either.
