I found this little bag of pork cracklins (fried pig skin chips/snacks) at the store and the label says there’s 7g of protein per serving which is a ton considering a serving is only 14g, so half of it is protein. There’s also 7 servings in this little bag, so in a tiny snack-sized bag there’s supposedly 49g of protein? But then next to protein it says “Not a significant source of protein”. How does this make sense? ~50g of protein is close to what most people need in a day. Is 7g referring to the entire bag and not per serving? Am I missing something obvious?

Its because its a very low quailty protien source, its mostly collagen and gelatin. i would not count it twoards your daily protien intake as it will not promote muscle growth/repair the same whey a complete protien would.
While it is mostly protein, it’s mostly in the form of collagen, which is only 4 amino acids ( building block of proteins), repeated to form the collagen. You need 20 different types of amino acids (essential amino acids), so while it’s good you are getting these 4 in high concentration, it’s missing the other 16 amino acids your body needs.
