If it makes your stomach feel better, then it’s a good idea.

I wouldn’t say it’s necessary for most people, though.

One downside that I can think of is that sometimes when you boil things, some of the nutrients leak out of the food and into the boiling water. Nutrients that are in the water, aren’t in the food anymore. That’s called leaching and that overall process reduces the nutrient content of the food.

Another downside could be that high temperatures destroys certain kinds of nutrients. However, this is more variable; sometimes, cooking unlocks nutrients that used to be bound up in a form that’s harder to absorb. I haven’t seen any studies on cooking pumpkin seeds specifically.

Changes due to cooking can be relatively modest; boiling tends to be one of the worst offenders, because of the combination of leaching and degradation due to high temperatures, but it ultimately just depends on the food being boiled.

Are pumpkin seeds like other veggies in that boiling them causes nutrients to disperse into the water, leaving them less nutritious than if you were to steam them?

Im asking because its a thought but I have no idea if its accurate.
