You will only gain weight if you’re eating at a caloric surplus.
The % daily value for fat is based on 78g of fat per day. It has nothing to do with weight gain or weight loss or how many calories you should be consuming per day. It’s just an arbitrary fixed number. Depending on your personal needs, you may need more or less than that amount of fat.
