Digesting broccoli and cauliflower.

Hey all,

Is there a way to process or cook these or other cruciferous vegetables so that a person can digest them without trouble while gaining the nutrition? Would adding them to a smoothie help, possibly a juicer?

Though juicing doesn’t sound right.

Answer

I don’t think I understand the question. Are you asking for cooking methods? I’ve never heard of difficulty digesting cruciferous veggies that have been cooked in one form or another.

Steaming is the most popular, with roasting (finally) gaining more popularity. You could pan fry them in a little oil. I suppose you could juice broccoli, but you’d be losing the benefit of the fiber from it

Answer

What do you mean by trouble? Cruciferous veggies are hard for many people to digest in large quantities, but the research says the heads of broccoli are easier to digest than the stalks. Broccoli - FODMAP content
