So after a quick search online, it’ll say that purple sweet potatos still have beta-carotene, and that they are purple due to them being high in anthocyanins.
But I can’t help but think they wouldn’t actually contain even near the same amount as the orange version, as beta-carotene is an orange pigment, which visually are not present at all in purple sweet potatos. I mean could you still get carotenemia from consuming too many purple ones?
Is anyone able to confirm if they do or don’t with a bit more certainty to what I’ve found? Even if someone could show me how much beta-carotene is present in purple sweet potatos if any?
For what is considered one of the healthiest foods you can eat, and thought to be a big factor in the health of the Okinawan diet, doesn’t seem like there’s that much info I can find.
Purple sweet potatoes are high in vitamin A, but purple yams are not, so you’ll need to be careful in determining which one you’re buying.
Also, foods high in beta carotene aren’t always orange. Red, yellow, and green produce often have high levels of it.
