I don’t usually peel potatoes though, and here’s why.

I eat them baked with Greek yogurt or sometimes mashed avocado, a protein (beans or leftover meat) chives or green onions and seasoning…really good with the EBTB seasoning. Yum yum yum, filling, and nutritious. Add a side salad and it’s a complete meal.

Yes, absolutely. Carbs aren’t bad. It’s overdone carbs that pushed out other nutrients, and that’s usually even pre-packaged stuff like chips, sweets, and fried foods rather than carbs straight from the vegetable or whole grain. Don’t overdo it with the toppings and it’s fine.

My favorite way to eat them is with Italian dressing. The tang balances out the earthy potato flavor, it doesn’t take nearly as much to reach a flavor I like compared to butter and sour cream, and if you get a healthy Italian dressing you’ve got a good serving of your healthy fats in for the day. Win for me lol

I love baked potatoes, also sauteed and even boiled sometimes. I do eat potatoes regularly, and I’d say there’s two important points:

  1. Always leave the skins on, and eat them, they’re the most nutritious part of the potato.
  2. They’re not vegetables, so don’t replace vegetables with them. Potatoes are starches; they’re appropriate substitutes for other starches like rice, corn, pasta, or bread. They’re solid and reasonable inclusions, though, as a starch, in otherwise-vegetable-based dishes like a stir fry.

Red potatoes are my favorite “basic” potato.

Yes, at least once per week. As long as you don’t load them with a bunch of crap (especially sour cream), they are extremely nutritious. They’re very high in carbohydrates, if you’re into watching that, but also very high in antioxidants and other nutrients.

I cut them into 1/2” cubes and throw them into the air fryer with a little bit of extra virgin olive oil- delicious!

In moderation sure. I have some potato every day. I would say it’s easy to overindulge though so don’t do that.

Nothing is going to beat a baked spud (ideally minus the butter, cheese and bacon; pick one, ideally the cheese) with canned fish. Nyom.

FYI when the potato itself is not the star there are a bunch of subs you can make. Mashed roast carrots taste amazing and are a more nutritious alternative to mash. Lately I have been experimenting with roast sweet potatoes, haven’t quite got the crust figured out yet but they taste amazing.

As a type 2 diabetic, I don’t eat potatoes. Don’t crave them and they don’t provide any nutrients that I need that I don’t get elsewhere. If you like them, go for it! Lol I’m not a potato hater. Just not for me

The key to potatoes is to heat them up and cool them down. You can heat them up again if you want. You are turning the sugars in the potato to resistant starch. Resistant starches are not digestible. This will feed your good microbes in your colon. Always think of feeding your good microbiome.

God no! Of the vegetables out there they may be one of the least damaging vegetables but they they are not good for you. Zero carbs is the answer. My health has improved 10 fold with the elimination of carbs.
