this is my italian grand mother recipe
-go to a butcher who has good meat, dry aged, expensive stuff. ask for beef bones possibly some knees too.
-put the bones in a oven at 150 Celsius for 40min (i like to chop garlic and parsil and coat the the bones with some olive oil before putting in the oven).
-take the bones out of the oven and place them in a big pot
-add some apple vinegar, ad water
-add one carot, add one onion that has been burned (just a bit) with some cloves in it
let it boil, and then lower to simmer for 24h
let it cool; when cool enought put in the fridge to cool it way don
now all the fat will be on top of the broth and you can take it out
filter with a fine mesh
-warm it and enjoy!
