Does boiling vegetable pasta remove much of the nutrients/micro-nutrients?

Similar to how boiling vegetables can remove some nutrients, does boiling vegetable noodles do the same? A loved one had a medical issue this past week and needs more vegetables in her diet but she cannot get herself to eat vegetables. She does like pasta so I’m considering cooking her some Cybele’s gluten/grain-free rotini.

Sounds like you’re talking about a highly processed food. It’s unlikely to have a similar nutritional content to the whole vegetables. You should check the nutrition facts on the specific product and compare it to the nutrition facts of the whole vegetables.

This sub is full of fear mongering and demonizing foods… Even if you lose nutrients, it is better to eat veggie noodles than no veggie at all. And you dont lose that many nutrients anyway. Consider steaming instead of boiling

It probably does remove some of the nutrients, but the veggie pasta (ie homemade or fresh store bought zucchini noodles) will still have more natural vitamins, minerals, fibre, antioxidants, and polyphenols than white wheat pasta

Any vegetables are better than none. I would also try puréing some vegetables into sauces and using it to make soups. A vegetable lasagne is always a great way to jam a lot of vegetables into one dish whilst keeping it yummy. Good luck to you and your friend!

Hey! If your loved one can eat wheat, you don’t need to go out of your way to have them eat veggie noodles if they don’t want. In my family, we cook a rainbow of veggies and throw them into mac and cheese. We cut them into tiny little squares so even my picky toddler doesn’t notice. Veggies I pan fry are zucchini, tomato, bell pepper, carrot, potato… pretty much anything to be honest. Also, for an extra kick you can mix mashed sweet potato into the cheese sauce. it makes sweet and still creamy!

P.s. I find corn, rice, and quinoa based GF noodles to be the closest to regular noodles

How are you preparing your veggies - boiling them?

If so, I wouldn’t eat that either lol. Try roasting them on a oven, put some garlic salt, salt, pepper, spray some oil and some cheese or sauce. Yeah, it’s more calories but it’s better than eating no veggies and I mean you can get low cal cheese/sauces so it isn’t too bad.

But generally yeah, food does lose nutrition when boiling cause some are water soluble (like potassium) but yet again I wouldn’t worry too much
