I don’t think eating fiber before high GI foods will have a direct effect on minimizing blood sugar spikes from those high GI foods. The only thing fiber does is its own effect, which would be that high fiber foods are slower to digest and will keep you full longer, and also not cause a quick blood sugar spike like simple carbohydrates would. I’ve read that pairing high glycemic foods with fats/protein can minimize a blood sugar spike, but I’m not sure how much of that is true. It’s best to just eat carbohydrates in moderation and maintain a healthy lifestyle to prevent blood sugar problems.
