If it’s literally just a change in moisture content I don’t see how that would change the nutritional value. The person who told you about the fatty texture may have been talking about personal preference for texture or flavour and not necessarily talking about nutrition.
Are they roasted flakes or just dried flakes? Cooking can impact nutrients and bioavailability. I’m not sure about the differences between roasted and unroasted coconut.
