You’re thinking of juicing. Juicing takes the fiber out of the fruit - you are left with juice and usually discard the pomace/ pulp which has all the fiber/ other nutrients.

Chewing is good. Saliva contains certain enzymes and helps you digest food.

The nutrients are fine; blending is not preferred while trying to diet for other reasons.

Basically the blended food is pre-masticated and partially digested, so it hits harder (blood sugar, insulin). And drinking calories will never make you feel as full as eating calories, it doesn’t take up as much room in your gut as chewed food, and it moves out of your gut too fast.

This would be of little concern to me - the way you cook food has more impact on the nutrients. Raw food is very good for you blended or not - steaming potatoes and then mashing is much better than not mashing and frying them cut.
