I see a lot of so called “easy” recipes that are IMO anything but. For those that hate cooking and meal prep, what are your go to’s for healthy AND quick/easy meals?
I’ll start. Shakes are my my absolute favorite. Throw a bunch of nutrient dense foods in a blender and voila. In terms of actual “cooked” meals, aside from BB staples like oats, I’d say frozen fish and veggies in the Hot Logic.
Tofu veggie stir fry-simply sautée veggies and tofu with minced garlic, some low sodium soy sauce or liquid aminos, maple syrup, and toasted sesame oil. Optionally serve with brown rice(can be frozen rice)Whole grain or legume pasta with tomato sauce and veggiesWhole grain or sourdough toast with nut butter, banana, and cinnamon
Burritos. Fill them with canned beans, cheese, salsa, guacamole. If you want to get fancy, add shredded lettuce or frozen corn. Or make it healthier by putting over brown rice instead of in a tortilla (you can usually buy precooked rice in the frozen section if you’re looking for ultra-quick).
I also do a lot of those pre-made salad bags where the dressing and some toppings (like cranberries & sunflower seeds) are inside the bag. Add some tofu or rotisserie chicken for protein.
Meat and frozen veges with potato mashed or cut into chips. Or pasta with tuna, pesto or a canned sauce mixed in. A small roast meal can also be really easy and delicious if you don’t go overboard. Roast chicken and buns is a winner at our house too.
Then for lunches a handful of salad leaves with a hard boiled egg, cheese, scoop of bought hummus and leftover meat from the night before. Sometimes other veges but that takes a bit more prep. We do a roast dinner once a week and the leftovers for our lunch salads are super delicious and only take a tiny bit of work to make into salads for work.
