Extremely high blood glucose after fasting

Hi all. I’ve been doing 4/20 over the past few months. But on and off for a few years. Also eat relatively low carb but not keto. I wear CGM and try to keep my glucose under 100. This week I tried 3 days of very restrictive eating. On my day 1 and 2 I had about 50gr of butter + some coffee. Day 3 was black tea only. Yesterday ate a piece of freshly baked sourdough bread with salad, nutritional yeast and kombucha. And my BG was 240. It was quite an unusual food for me though. Today as well very high after the meal. But this time I ate what I regularly eat. Higher than usual glucose anyway. I’m feeling good though. A bit sleepy. I googled, and it seems normal (?). But does anyone have any explanation why is this happening? I want to fast regularly. And I’m not even sure if I’ll be able to eat carbs at all. Thank you.

EDIT: I don’t have issues with blood glucose in general. My fasting level is usually around 77. Im testing it to be aware. And I know about carbs in bread. 240 is still quite an unreasonable spike for that meal.

Carbs are broken down into sugars in the digestive process, so the sourdough alone may be the main culprit. Did your salad come with a sweet dressing like a vinaigrette? That may also factor in.

I don’t do BG tests, so I can’t be certain how long blood glucose levels stay elevated after eating carbs, but if you’re testing due to type 2 diabetes or insulin resistance, it could be something about your insulin efficacy? I’m not a doctor so I can’t say for certain, but hopefully some others will chime in.
