When talking about vitamin C improving iron absorption, we’re primarily talking about non-heme iron - essentially iron from non-animal sources.

For people with iron-deficiency anemia, the recommendation is simply combine the iron with a source of vitamin C, spaced about 2 hours apart from calcium intake. (Multiple minerals share a common absorption pathway, and they all generally compete with each other, but calcium is the primary competitor.)
