They are all healthy in their own right. Different components are in higher density in others. The best way would be to have a mix of different grains in rotation.

Local grains would be the preferred ones.

But sorghum, amaranth, buckwheat, rye are all great :)

If it’s gluten that’s the issue, just buying gluten free oats should do the job. Would maybe switch it our for pudding rice or cream of rice, though I’m not gonna lie most grains are nutritionally inferior to oats.
