Lean or medium fat Ground beef and rice/pasta. Meal prepped for 3-4days. Easy to digest plenty of B vitamins given.
Add vegetables in mainly beans I’d say, safe bet for caloric intake sake.
Snack of fruit and nuts works a wonder.
Otherwise, I’d consult the dinner and breakfast.
4 (or as many as he likes) Eggs and toast for breakfast (get good quality bread) with a piece of fruit.
Dinner can be the same as lunch to be honest.
Other than that, low processed foods and keep digestive health in check.
Sweet potatoes are pretty solid imo. Higher calories then most veggies, taste great, super nutritional. Sounds like he’s getting plenty of volume for lunch so either he stuffs himself at lunch or can find other times throughout the day to eat more?
My teenager is a dual sport athlete in high school and tries to keep his calories over 3,200 a day to keep from losing weight.
A hearty sandwich is easy to fill up with calories.
Typical lunch for him which is 1190 calories
Turkey sandwich - 600 calories Multi grain bread 2 slices of Pepper Jack Cheese4 oz of turkey lettuce tomatoemayo and mustard
Snack bag of cashews- 240 calories
Banana - 100 calories
Bottle of chocolate milk - 250 calories
