Need a healthy high carb and protein meal for lunchtime. At the moment I just have a ham and cheese sandwich, apple, banana and some biscuits.
I recommend searching high protein salads or high protein quinoa salad or the Jennifer Aniston salad for example.
I love quinoa for its protein and fiber content and I can find it at pretty much any major grocery store. For a quinoa salad, you could add whatever veggies you want like radish, cucumber, tomato, bell pepper, broccoli, slaw etc… Since there’s no leafy greens, you don’t have to deal with wilted texture when you pack it for lunch. Add some cooked poultry or beans to bump up the protein more. Add nuts for crunch and to give you some healthy fat, pro, fiber. My simple two ingredients dressing is olive oil and a squeeze of lemon. I like to also add a little everything but the bagel seasoning—a wonderfully versatile one and done seasoning. That’s it and you can make this ahead and have 2-3 servings of leftovers to pack.
Some other suggestions:
A wrap - this can fit more veggies and protein than a sandwich
Try tuna or salmon salad for a change of pace in your sandwich or wrap filling. You’ll get some omega 3 fat with these.
Egg salad wrap or sandwich (there are cooked peeled ready to eat eggs at stores) is another one. When I make this or tuna or salmon salad, I use plain Greek yogurt to get more protein & other nutrients.
Healthy protein snacks:
plain (no sugar added) nuts - those I eat raw or roast with olive oil and seasoning like turmeric and cayenne pepper - yum!
Greek yogurt
cottage cheese or string cheese
hummus - add dip friendly veg
protein snack bars - tons out there so read the labels and pay attention to sugar
