I’m looking for more nutrient dense recipes. What are some of your favorites?
Made a soup today. Two onions, two carrots, sautéed. Then some garlic. Then cumin, rosemary, and chili flakes. Then can of diced tomatoes, a few tbsp of tomato paste, a bunch of chicken stock and lentils. Simmer till done. Add some chopped kale and spinach till the soften. Portion it out, and after I warm it up, top with some feta, lupini beans, and parsley.
Soups, chilis, curries, etc… anything that lets you add protein and veggies?
Taco filling also. Ground chicken/turkey, peppers, onions, greens, spices, beans/lentils.
Anything that basically turns into an orange sludge with some green bits in it? 🤷♂️
I just tried black bean brownies today, they came out really good (I just used boxed brownie mix and pureed a can of black beans with a little water, then bake per box directions, you don’t need to add any eggs or anything). I also made homemade pizza sticks with whole grain dough, low-fat string cheese and turkey-pepperoni.
“Trash can chili”. Essentially just a buttload of leftover vegetables, a few kinds of prepared beans, can of crushed tomatoes and some lean protein like ground turkey or even lentils. Chili powder or hot sauce. Usually just throw it all in a slow cooker for a few hours.
