History of cooking oil?

I’d love some historical references of cooking oil. It’s so pervasive within our diets and certain cuisines. For example, Chinese cooking uses a lot of oil but I can’t find history references.

Answer

I would bet mostly lard for Chinese cooking as pork is a very popular meat there and it’s consistent with other cultures. I can’t imagine sesame oils or groundnut oils have been used historically given the difficulty in extraction.
