It claims no preservatives in the label there, but I saw the use by/freeze date is over 3 months away. Are they just straight up not being truthful?

It’s fully cooked and sealed in an airtight package. If it was cooked/sterilized correctly and the airtight seal holds, it should be safe to eat indefinitely, similar to canned goods. Even if it’s safe to eat the flavor may deteriorate after a while, though.
