I count from when I stop eating. I like the way Dr Jason Fung says it: any time you’re not eating, you’re fasting.
So once you’re done eating your meal, then you’ve started fasting. Time sleeping totally counts as time fasting; you would have to have like a feeding tube hooked up to you while you were out for it to count as eating time. Yeah for the first few hours your body is digesting that meal, but that’s still part of the fast (it’s just the first phase, that’s all).
