Most elimination diets eliminate carbs at the beginning and you gradually add them back in. Fasting is also beneficial to aid healing of the gut

You don’t need high carbs to be healthy, a week or so without them won’t cause any harm.

I would cut out sugar and processed carbs before you start, so that you don’t have to deal with withdrawals

It would be preferable to do an elimination diet under the supervision of a dietitian as they can guide you in regards to getting enough macro and micronutrient as some elimination diets can last quite a while and may risk deficiencies

I would think for an elimination diet you can eat rice, oats and potatoes for carb goals, while still meeting micronutrients. But like others have said, it depends on the purpose of your elimination diet and what you need to eliminate.

On a basic elimination diet start by eliminating gluten, sugar, dairy and all packaged foods. I would highly recommend keeping a mood food poop journal to see what items may cause your problems. I believed for years the hype that food didn’t matter because it didn’t seem to matter what I eliminated, I still had problem! It took realizing nightshades and getting rid of those to start to feel better and I figured that out with the journal. Good luck
