I only cook for myself and sometimes when I follow a recipe, I find the meal has too much quantity for one person. so, I take half of the ingredients’ amounts mentioned next time I cook this meal. I then have discovered they put a serving number on the label, but I don’t know exactly how many servings per meal I should take.

Can’t really answer that because it isn’t about “servings”. They aren’t all pegged to the same nutritional value. You should be figuring out the calories in meals and then consuming an appropriate amount of calories for your weight and goals.
the best way to do this would be to make the entire recipe for 4, weigh it, the. take 25% of it by weight and you got a serving. to decide how many servings you should eat…. it depends on too many things you did not provide
