How much does protein content of meet change when made to jerky?

I make my own chicken jerky cause it tastes great and it’s a convenient snack. I’m also starting to realise it could be a god tier snack for protein intake, if it’s a nutritionally plentiful as cooked chicken breast is. That’s where I’m stuck though. Does the chicken breast lose protein when it’s dehydrated? Do macros stay the same, of course given you factor in the change in weight?

Protein isn’t water soluble or volatile, so I don’t think you’d lose any in the dehydrating process. Furthermore, I can’t find any evidence that dehydrating degrades the protein such that it is indigestible or anything like that. The macros, it stands to reason, would be the same, accounting for the change in weight, as you said.
