How to make a meal out of a baked potato

All I ever want for dinner lately is a potato with hot sauce and sour cream. Is it ok to eat this fairly often? Should I add on anything? Sometimes I add vegetarian chili but I don’t always want that. I have trouble eating enough to begin with.

Given your lack of appetite and what you’ve been eating lately, I want to encourage you to see a doctor and maybe get some bloodwork done if you’re able. If you have some sort of nutritional deficiency, metabolic disorder, hormonal imbalance, or other issue those things don’t typically resolve themselves; they usually get worse and bring other problems along.

And if you have a lot of issues with anxiety or food aversions, this might also be an important problem to tackle with the help of a professional, so again if that’s an option for you I’d pursue it.

In the meantime make sure you’re getting more protein, health fats, and greens in you. You don’t have to forgo the baked potato, just make sure it’s not the only thing in your diet.

I chop fresh green onion or chives on mine. I put them in my eggs too.

If you have a baked potato you can mash it on your plate drizzle olive oil on it and tumble a bit. Add your green onions.

Then use a spoon to make an indentation in the middle where you crack an egg.

Cover with cheese and bacon sprinkle if you have it then bake at 375 for 10 to twelve minutes until egg is desired doneness.

I wiggle the plate and watch the egg.

If it wiggles too much I leave it in.

If you’re using gigantic Baker potatoes you can maybe just use a half a potato sometimes I do that.

I bake them ahead of time so I’m ready to roll. But also remember you can cook a potato in the microwave just wrap that bad boy in a paper towel and make sure there’s plenty of water on the towel and on the plate turn it every 3 minutes till it’s done. Then you can use it straight from that to make your egg potato bake off.

My favorite way to make this a complete meal would be

1 large Plain Baked potato

Sub sour cream for low-fat Greek yogurt (Gives protein and fats)- mix this with some spices and you can make a sour cream and onion dip that has a good profile of ingredients without msg and other artificial ingredients(not that they’re bad, just some people tend to avoid these things)

Large Side of spinach, lightly cooked down with spices as well as some steamed carrots/broccoli.

You could do different kinds of baked potatoes. Like a vegetarian taco one - add taco seasoned seitan or tofu or meat substitute of your choice, black beans, onions, peppers, tomatoes, cheese or cheese substitute, salsa, sour cream

Or a Mediterranean styled one with veggies, Kalamata olives, feta, olive oil

So on just turn the potato into a vehicle for other food

Ok I used to be addicted to potato skins. You can make them similar just by baking the potatoes whole, then cutting in half lengthwise and then taking a bit of the innards out with a spoon. You can leave a good layer of potato inside or you can scoop them right down to the skin. Then you can stuff them with WHATEVER DA FUQUE YOU WANT, top with cheese and back into the oven! You can finish them with sour cream and hot sauce, or whatever sauce you want!

Some ideas: philly cheesesteak (peppers, mushrooms, onions, thin sliced beef, worcestershire sauce, garlic), butter chicken (use that pre-made sauce to make things quick and easy), taco (taco seasoned ground beef, tomatoes, green onion, jalapenos, top with fresh tomatoes, drizzle salsa overtop and dip in sour cream), maybe even breakfast ones (scrambled egg, chopped up sausage, peppers) etc etc. I mean literally anything can be made into a potato skin!

You can even make twice baked potatoes by mixing the innards you scooped with some butter and milk, whip until smooth, then add in whatever you want. Classic would be bacon bits, green onion, cream cheese and shredded cheese. But you can go in any direction with this. Then top with more cheese and bake again!

Or you could do shepherd’s pie with ground beef, carrot celery onion and peas, gravy, then make mashed potatoes out of the innards and spread overtop and then bake!

If you want a crunchier texture, after you scoop the innards out drizzle with oil, salt and pepper and throw back in the oven til they’re crispy. THEN stuff them, re-bake and so on.

One thing I really like is the broccoli and cheese sauce. It is probably not the healthiest…I’m not sure what is in the sauce but it is reasonable in calories/fat and tasty…plus you get some veggies.

I like the idea of trying Greek Yogurt instead of sour cream to increase the protein.

We also started using smaller potatoes instead of the huge bakers so we could add more toppings without creating too big of a plate. Totally added to our nutrition intake without adding a ton of calories.
