I’m vegetarian but here are some of my go to foods.
Cajun (or any seasoning) roast tofu. Squish the tofu til most the water is gone, marinate (oil, seasoning, salt) and bake for 20+min at 220c. The longer the crispier. Add to salad or eat on its own.
Satay sauce (peanut based) for dipping or pouring over rice and vegetables of choice. My lazy satay sauce is just peanut butter and oil plus lots of chili powder, black pepper, garlic and soy sauce.
Homemade chocolate, 1-2 tbsp of coconut oil+ 2 tbsp of peanut butter and 1 tbsp of cocoa powder (unsweetened). That’s just my base, I usually add nuts or coconut flakes. Melt the fats together in the microwave, add the cocoa powder and freeze for 10-20min. I prefer sugarless dark chocolate but I sometimes add a teaspoon or so of sweetener if i have the urge.
Seed porridge. My go to was a flaxseed base, peanuts, pumpkin seed and almonds. Could be any type of seeds or nuts but I’d recommend something like flax for cohesion. Pour hot water over and add flavour of choice. If I was wanting something sweetish I’d add peanut butter and cocoa powder. If I wanted savoury I’d add tomato puree with chili powder, black pepper and Tabasco. I particularly liked this porridge as it was high calorie but low volume meaning my stomach size wasn’t enlarged too much and the transition back to empty stomach was smoother.
Frozen can of coconut milk or cream is a nice dessert. Add flavour if you want. Since fasting I have had more of an appreciation for simple flavours so I like this plain but sure throw some cinnamon, nutmeg and sweetener. Adaptable recipes for the win.
Those are just a few, hope they are interesting.
Grilled cauliflower steaks.
Mushroom buns with black bean patties..omg.
Ants on a Log - Peanut butter on Celery with raisins!
Not a vegan but love the cuisine.
Lettuce wrapped kosher pickles with red bell pepper slivers…very acidic but nice on a hot day.
chickpeas and peanut butter are good replacements for meat. Lentils too.
(not together necessarily. just mean in general).

This sub isn’t going to like the concept of not gorging on raw steak, eggs, and organ meats. But being vegetarian is the way to go!
