I mean that’s ~600 calories of olive oil a day. It seems excessive to me but if you’re accomplishing your health and fitness goals without any negative side effects I don’t think there’s that much of an issue with it?

When taken by mouth: Olive oil is commonly consumed in foods. Up to 1 liter (~33.8oz) of extra virgin olive oil weekly has been used safely as part of a Mediterranean-style diet for up to 5.8 years. Olive oil is usually well-tolerated. It might cause nausea in a small number of people.

They have a references section on that page that lists a number of studies pertaining to the consumption of olive oil that you can search and read and make your own decision.

That’s 4000 calories a week of fat from olive oil. You can calculate what % of your daily calories that is. The American Heart Associated recommends 25-35%.

I find when I eat that way, I’m always hungry because I’m eating a food with no volume over foods that will make me feel more full.

Cooking with olive oil above low heat destroys the benefits that make it “good fat”. You may want to read up on that since you’re using so much. Imo it’s often better to use butter for high heat cooking.

Answer

You’re going to get your fair share of olive oil on a healthy diet, especially if you’re using it for salad vinaigrettes and for vegetable roasting. Just for variety you could use other sources of fats in smoothies (coconut milk, avocados, chia seeds).
