There’s some exceptions but generally there’s no way I can sit down and eat a whole veggie based meal so the most efficient and convenient way I’ve found is to blend(not juice) all my vegetables. My go to kale, carrot, celery, ginger, with some blueberries andba couple pieces of frozen Mango for some sweetness.
If you enjoy smoothies go ahead and pack some neutral veggies in there! I usually make a small blueberry smoothie to break my fast with a bit of nonfat Greek yogurt, spinach, and/or raw zucchini. I know it sounds strange but you really don’t taste them. The zucchini also makes it nice and creamy so it blends amazing with a few cubes of ice. Kiwi or pineapple also tastes great in that mix as well.
Brussels sprout salad is also something I recently have been loving!
4 cups shaved Brussels sprouts
¼ cup extra-virgin olive oil, plus extra for drizzling
¼ cup fresh lemon juice
½ cup pine nuts, toasted
⅓ cup dried cranberries
⅓ cup grated pecorino cheese, optional
⅓ cup chopped chives
Sea salt and freshly ground black pepper
