If boiling vegetables depletes them of water soluble vitamins

Couldn’t you theoretically just store the water to make it a natural vitamin water? Is this the better and healthier vitamin water alternative 🤔?

No because the vitamins could very likely be either destroyed completely and even immediately OR at BEST simply not be AS absorbable by the body as a standalone form whilst immersed in water.

The second one is much less likely: the first one much MORE likely especially considering that a high temperature is a factor at play.

We need to eat some raw fruits & veggies daily for the raw enzymes. That’s why we’re encouraged to eat, say, a raw apple or a salad an hour or 2 before eating dinner so the raw enzymes can get the gut ready.

It’s funny. I had a similar thought today but about frozen spinach. When I defrost it it gets watery and I usually just dump the excess green spinachy water down the drain. But then I thought.. what if i store it for later and make a smoothie with it!
