On one hand, I’ve heard it’s low calorie and good for digestion, but on the other hand it must be high GI since it’s made with white rice.

You can use different types of rice, it may change the texture though. When paired with ginger, meats, vegetables - it can be made into a complete and wholesome meal.
This type of porridge can be enjoyed at pretty much any age because of how easily digestible it is.
It depends on how much congee you eat. Congee is soupy and it has lower GI per cup than plain white rice. Congee is good for people who are sick and do not have big appetite because it is easier to digest.
I make congee pretty often. It’s easy on my stomach and you can add whatever vegetables you have. I’ve made it with ground turkey, chicken, sausage. In fact, today I bought some turkey sausage to make congee tomorrow. I make it in my instant pot and my husband and I have a bowl pretty much every day. I’m not a nutritionist, but what I have read is in the Asian countries they consider it like we do chicken soup when you’re not feeling well. I can’t answer if it’s healthy but my personal opinion is yes it is.
Congee is just rice that’s in a more easily digestible form. If you’re eating ONLY congee it would probably spike you GI since it’s easily digestible especially when your not eating protein or fiber with it to slow the digestion process. I would say rice is neutral it’s a staple food (like potatoes), I wouldn’t say it’s healthy, I wouldn’t say it’s unhealthy. I would only eat plain congee if had a upset stomach. Only eating congee wouldn’t be a well rounded/complete meal.
Pretty much anything is better than meat and eggs, unless your goal is to be obese and diabetic.
