I’m struggling with not snacking during my “down time” when babe goes to sleep at 730pm. Is it okay to have a diet pop around 8 or so? Not every day, but couple times a week or so.. I fast from 6pm to 10am roughly.

If you’re looking strictly at calories then yes it’s perfectly fine, but I have heard that artificial sweeteners have a tendency to cause different reactions depending on the person. I use mints which technically have trace calories but it’s something I’m willing to live with. Ultimately if you want a diet drink have one.
