There are two different questions you’re asking here. The simplest thing to do is track your fast as being the window between two instances when you ingest food. There’s no need to overcomplicate this bit. The second question you’re asking is when does your body initiate certain processes after the last time you ate. For this we can realistically only make best guesses based on how we feel and how other people react to fasting.
