Is it healthy to just eat a bowl of roasted potatoes for dinner?

Not particularly. But if that is all you can manage, for what ever reason, then go for it.

If you can, though, change it up to include some roasted pumpkin or sweet potato. Maybe some chunks of zucchini as well.

Do what you can with what you have. But still try to add nutritional value if you can.

There’s no right answer but you’re better off combining different micronutrients and macros for satiety and health. For example, potatoes with chicken and green beans. it can be anything but it’s varied.
