As a vegan, I’m looking for sources of iodine. I’ve read a few comments on various threads suggesting that the iodine in iodised salt ‘evaporates in just weeks after packing’ and also some saying that you would have to eat a ton to get recommended amounts. Any help mucho appreciated!
the iodine added to refined salt does not evaporate it is added in the form of a salt iodides or iodates of sodium (NaI, NaIO3) and potassium (KI, KIO3) and not in liquid form, it would be like mixing yeast and flour and trying to separate the two, basically impossible without a well-equipped laboratory (it is not possible to separate flour and yeast, but iodine salts from table salt sodium chloride (NaCl) is possible by chemical reaction.
There’s already some iodine in vegetables, but people suggest an additional good source to nudge people in the right direction.
The issue with eating iodized salt for iodine is the sodium. Morton’s has a lite salt with less sodium, more potassium.
The issue with sea vegetables is potentially too much iodine.
Be careful with supplementing with iodine. I’d only do it if you have a health care professional and labs telling you to supplement.
Salt wouldn’t be the best method to do this. I would look at thinks like seaweed or an animal based supplement.
