Liver Jerky vitamins and micronutrients

Hello!

I’ve been making my own beef liver jerky. I was wondering about the vitamin & mineral content, since the product loses water and it’s dry, what are the contents for the dried product, compared to raw liver per 10g serving? For example, 10g of raw Liver would deliver 99% of the RDI for vit. B12, but how much would 10g of liver jerky deliver?

Answer

You only need to measure the weight of the product before and after drying and you will have part of your answer. Minerals will be unaffected by the drying process, but you are going to lose vitamins based on what your process is, how long it takes, and how its stored afterwards.
