The most helpful thing I do is cook up a batch of chicken breasts every week in a crock pot. It’s insanely easy to do- I marinate them overnight in a crock pot bag and the next morning set the bag in the pot and there you go. The chicken comes out so tender and yum and reheats really well as long as you keep it moist.
The chicken is good for the entire week and makes salads, stir frys, casseroles, or anything else super easy to make.
If I wanted to package them up in single servings I’d include the chicken, steamed broccoli, and some sort of rice dish with a spot of cheese.
Getting the chicken cooked is the time consuming part- if that’s done everything else is easy.
If you are portioning things in to containers that are sealed (strongly recommend the Rubbermaid meal prep containers) it’s only really drying out of your proteins which will be a problem. Solution for drying out is to sauce everything or cook stews. A cooked chicken breast will be fine for the week in the fridge but after a few days it will dry out and be gross if it’s not covered in a sauce to help it retain moisture.

I try and use sous vide whenever I can to save fridge space and because I can bulk buy proteins every few months to save money. Meals are vac sealed in the freezer and I just throw them in the sous vide an hour before I want to eat.
