Most pickles in a jar have sugar

I live in germany. Most pickles in a jar have 4-7g sugar / 100g.

They taste great, but considering the weight of a pickle the sugar-content might become significant.

For example, a medium sized jar is 600g (that’s 24-42g of sugar) and can easily be eaten in a day.

There are pickles in a jar with 0g of sugar, but unfortunately they taste like wet pants.

So i guess it’s no pickles for me.

At the end it is not about the taste it is about that this strategy is working, that’s what counts! I eat avocado, coconut, cucumber, eggs and fish day in and day out

Lactofermented pickles are extremely easy to make and you can use all kinds of things to flavor them, not just dill but garlic, peppers, various spices. One summer I bought 8 kilos of pickling cucumbers and had so many pickles I had to give them away to neighbors. (Lactofermented also means you have to keep them in the fridge.) And I used no sugar.

Basic pickling ratio1 cup water 1 cup vinegar 1 tbsp saltOr equal parts vinegar and salt and 25% salt

bring to a simmer or early boil and pour into jar with your whatever keto friendly veggie and whatever herb/spice. Let it cool to room and then refrigerate…
