OMAD (Plus) New to Cooking Question

I’ve been single all my life with no kids. I’m 70 and I’ve been retired going on 10 years in October. I’ve only been doing IF for a couple of months and slowly building up to the idea of OMAD because I’m simply not as hungry anymore. I’m not new to fasting…but never did it a lot either. These last couple of months I’m doing between 18-21 hour fasts. My goals are mainly for the autophagy and NSV’s. I’m overweight…but I know IF will help me with that too…so it’s secondary.

My problem right now is that I’m also new to cooking for myself since my job for 25 years was in transportation…before that I was in the military…so I did a lot of traveling and long commutes. During those times I rarely…if ever…cooked at home…and sometimes didn’t even have the cooking facilities anyways. I did restaurant takeouts, drive-thru, packaged home-cooked meals, etc. It’s a habit that is still hard to break…but I’ve been trying hard lately to start cooking at home.

My problem is that I can’t really get organized…and people that have cooked all their lives will most likely find this hard to understand. I buy too much. It seems like it would just be SO EASY to cook only 1 meal a day. BUT…I’m finding it more difficult and it’s stressing me out a bit. I apparently never got the cooking genes Mom had…or the cooking brain…OR the organization skills to get it all together! I feel so dumb…a Betty Crocker NOT🤷‍♀️‼️…like I need a OMAD Cooking for Dummies Class or something 😂 I’m wasting food and I have a bunch of recipes swimming around in my head (during my fasting hours 🤦‍♀️) that I want to try. If I do try a new recipe and I hate it…I’m stuck with extra ingredients I’ll never use again! I should also mention here that I’m a minimalist so I absolutely HATE clutter‼️ It’s ALL costing more than eating out 😳

My questions are: Did/does anyone find it like a whole new learning curve just to cook different as a result of IF? How can I keep it simple?

I hate cooking. Probably because I suck at it. When I started IF two months ago, I bought a Hamilton Beach indoor grill. I absolutely love it. Soon easy. I do lots of salmon, chicken etc. Add a salad and some frozen veggies and Voila! Delicious and super easy. Also, I do a lot of omelets.

Where do you get your recipes from? I highly recommend watching YouTube videos with recipes as they show you how to cook things as well. Reading a recipe as a beginner can be daunting, but seeing done can reduce the questions you may have on how to do it.

Check out Ethan Chlebowski on YouTube, he does some basic recipes that you can try out. Don’t forget you can modify all you want too. Don’t have an item? If it can be left out, then do it! Cooking is much less of a science than baking is, you can modify it all different ways.
