According to Cronometer, 24.6% of the calories from Coconut Flour come from Protein. However, in Dry Coconut Flesh, only 4% from calories come from protein. Why is coconut flour more protein dense than its Whole Food form?
could you be looking at stats for defatted coconut flour? a type of flour where the fat is removed. im guessing this type of coconut flour is a waste product after fat is extracted to make coconut oil. compare the fat contents.
I believe that coconut flour is a made from the pulp left over after producing coconut milk. And I presume that most of the fat ends up in the milk part, and most of the protein ends up in the pulp part.
I don’t know which type you’re seeing, but I’m assuming that if it is a flour, it has decreased fat content, whereas the whole form is still quite fatty. Flours can’t be too fatty or they become a paste
