Question about Coconut Water

Hi all,

I was reading about coconut water and its glycemic index and multiple sources say it has a glycemic index around 3, its just water with sugar in it, is this a special type of sugar that metabolizes slowly almost like a complex carb? how is this possible?

Coconut water is not just water with sugar? It contains vitamins, minerals, enzymes, and a decent amount of fiber which is probably why it’s lower on the glycemic index. It is also a good source of structured water or H3O2. One of the most hydrating fluids on the planet.
