Recommend me healthy nutritious bread recipe please

I would love to make a healthy home baked bread without the bad carbs. Any suggestions ?

Without the bad carbs? Breads are by default carbs packed. You ain’t looking for bread if your worried about carbs.

You can find keto and low carb breads but more often than not they use highly processed ingredients or are absurdly expensive.

However, you could potentially replace some regular flour for coconut flour or blanched almond flour, increase the fat and lowers carb.

A good recipe I use (made myself):350ml or g water,Teaspoon+1/3 yeast,Teaspoon organic honey,75g organic wholewheat spelt,250g organic white splet,225g organic bread flour.

Place in a bread machine to be mixed for 1hour. Take the dough out and shape to boule. Rest it. Place it in a Dutch oven for 40min covered then 20min uncovered.

Sourdough is good but in the context of my diet, I don’t chugg down fibre from wheat, so the anti-nutrient content isn’t as much of a concern. If you want to reduce the anti nutrient content of this loaf, you can do a long ferment by leaving this dough in the fridge for 24-48 hours. This will allow the yeast to slow down and also naturally eat up the dough the same way sourdough works.

You could try making sourdough? It’s easy to find healthy recipes for this online, I would recommend BBC Good Food to find a good guide on how to make the fermented starter.Also, to increase the fibre and nutrients you get from the bread I would recommend using wholemeal flour.

Not really bread but something I love : cooked and mashed sweet potatoes with grounded oatmeal, little butter, salt and pepper and in the oven into flat think pancakes at 180 C for about 15 min. It’s about 1/3 oatmeal for 2/3 sweet potatoes. It was supposed to be a replacement pizza crust but I love it too much to eat with anything else 😂
